i mean honestly, create new path, create another new path, right click, dialog box, right click, dialog box, tickbox? jesus christ.

Well, there's always the easy way of using the eraser, but with the path tool it gives you more flexibility when it comes to applying other tools, including layer masks. Paths are also what Illustrator's all about, so if you nail them, you're pretty much halfway to being a decent graphics artist.
