ChaosEnginesays...It doesn't make it more nutritious per se, but it does mean that your body has to expend less energy digesting it, so you get more nett energy (joules/calories/whatever) from eating cooked food (particularly meat).
It kills bacteria and softens the fibers in vegetables...I don't think it actually makes it more nutritious though.

TheFreaksays...Depends on the food actually. Cooking can make carotenoids more bioavailable, denature oxalates which block the absorption of certain vitamins and minerals, and also form new compounds such as anti-oxidants.
Other foods loose nutrients as they're cooked.
Whatever. Eat what you like and at least you'll be happy.
