Paybacksays...That’s really brilliant. The water gets scooped up at the notch on the side, then the water "slides" down in a spiral to the axle and out the other end.

newtboysays...I wondered that too, but the pressure it produced (see 1:33) seems to argue that it's the cumulative height of all the coils added together (not just a multiple of the maximum height, though, because each successive coil is shorter).
That's just my guess, though.
