Actually it is not Italian. If you listen to the director's commentary on the DVD, it's basically jibbrish made up of a lot of languages and none. Similar to what the hunchback spoke in The Name of the Rose.

people turn video cameras sideways for the same reason they turn still cameras sideways: to get the person's full body in it, or at least to get a portrait-type view. unfortunately they don't realize whatever they play the video on doesn't ALSO turn sideways.

I always think those people are incredibly strong and just turn their TVs on its side when that part comes up.
