Why would you even try it with skim milk? The part starting at 1:05 is pretty clear.

I guess I could have explained more clearly. I was almost completely sure that I would see different results that those in the video, and my observations agreed with my hypothesis.
In other words, for the same reason that would lead you to ask a question to which you presumably already knew the answer.
