HugeJerksays...You can get almost any steel to be really sharp, the difference in quality comes in with how long it holds that edge.

Buttlesays...Good quality Japanese blades are carbon steel, with no concessions to stainlessness at all. In a humid environment (my cellar, for example) carbon steel can grow that much rust in a week, easy.
