Well, I wouldn't want to do this 'without' a cable. Let's assume for the moment that this isn't fake. What happens if they get halfway up, then the car starts to slide backwards? Since it's a Ski Jump, it's made to have things speed down it and fly off. I'd hate to do that in a car (I think I saw that on Top Gear somewhere).
My guess is that the cable is a safety locking mechanism that prevents the car from sliding backwards. Note when the car fails to climb the ramp, I don't see it slide backwards much. I don't think there's really any another way to provide this safety measure. Well, at least without damaging the car and/or ramp...

ReverendTedsays...I was thinking the same thing about the cable that you catch a glimpse of when the snow-tired car finally gets going, and then again when it reaches the top. I'd expect it's just a safety precaution. Otherwise the car would have made it without needing to resort to studded snow tires. I don't think it was "edited out", though - just hidden beneath the snow. You see it pop up out of the snow as the car gets close, and I think that's the black line you see behind the car from the aerial shots after it reaches the top.
I'd be curious what cars couldn't make it up the ramp equipped with the same snow tires, though.
