From what I understand, those road trains get it up into high gear, mat the accelerator, and then pile some bricks on top of that, all the while jumping up and down on the bricks, then disengage the brake system just because it might be holding them back.

Vast majority of outback roads are going to be 1 lane. It's not difficult to pass traffic safely, if you're stuck behind a big truck, most will flick their indicator on when it's safe to pull out into the other lane. From the look of the car, it's probably a tourist/hire van. Lots of backpackers pick up those cars in the cities then go traveling about.
