I wonder if they are using a little pipette or if that is just a solid stick.

To me, it looks like they are using a small phillip's head screwdriver. I say that because I have that exact screwdriver in my drawer.

But pipette sounds cooler.

Here in Australia, I think we would call these "flat whites". Though I have to say that I don't know the difference between a flat white, latte, and cafe au lait. I prefer filter coffee.
