Chef John Cooks Beef Stroganoff

This is one of my favourite dishes, but I have never made my own before. That is dumb and I intend to remedy that with this little gem! No paprika though? And rice not pasta for me.

I make Chef John's stroganoff recipe at least once a month, and it's delicious every time. It's VERY full-flavoured, but I do put in a little bit of paprika and I love it with fat pappardelle.
