the cappuccino machine where I work at is a bit too strong with the steam, so we never get to have milky foams like that. Plus we serve in tall paper cups, not the mugs. So it's really hard to get any sort of design on top of the foam when you have such limited surface.

Our foam machine is made to produce foam as quickly as possible, as much as possible. So the foam is fluffy, but isn't creamy. It takes some getting used to that thing.

Another trick is to dry the cheese under a heavy weight to make it more firm and less creamy. This will allow it to maintain it's shape if put in some sort of other mixture.

There used to be a really really good Thai place near where I used to live, and I'd always order this. The cold sweet yet tropically tart mango contrasting with the warm creamy coconutty rice, sweet jeebus it was heaven on a plate.

This vid just shows the right way to do it.

It does make a difference between delicious creamy black goodness and sour brown bog runoff, of course if you've already had 12 alcopops you probably wont notice but honestly, Guinness drinkers will send a pint back (or throw it over you ) if its not up to scratch.

There even was (may still be) a hotline to snitch on pubs that dont serve it properly. The company reps check that pub staff know how to do it right and give that proper creamy head. Its serious businness drinkin Guinness
