So I wonder how they did this--just have the guys sing normally a cappella, then re-record it at faster speed, then insert it into the regular music track? Or is it just digitally alerted? (I don't know how old this song is, maybe it was just re-done)

It sounds like slower than normal speed. The original voices for the 'monks, was recorded at regular speed, and then accelerated. The pitch on this is slowed down lower than the normal speaking or singing voice, hence the strange tone and timbre.

And actually, it's all one guy. The guy that does the normal voice does all the Chipmunks voices also.
