The "ooh"ing at around 1:45, when he's displaying the first chunk he's cut, is likely over the pale color of the fatty underbelly. Toro, or cuts of fatty underbelly, goes for a much higher price than the rest of the Maguro (red tuna). Its really yummy....

I'm drooling right now. I want a slice of that Toro.
