Lightsaber battles in the Star Wars films are all style over substance, which isn't necessarily a bad thing.
In a real sword fight there are several stages that you go through, starting with tentatively feeling out how your opponent will act and react, even if you've fought them many times before. With as deadly a weapon as a lightsaber this is even more important. As they say, the loser of a knife fight bleeds out and dies on the street; the winner dies on the way to the hospital.
In this video a sword expert puts together what an actual lightsaber fight might look like, and the result is SFXed into a fun short film.
