Ingredients:
1 loaf sliced rustic bread
8 oz. brie cheese
8 slices havarti cheese
8 slices colby jack cheese
1/2 cup freshly chopped basil
1/3 cup sun dried tomatoes
1 stick butter
Directions:
Preheat oven to 450 degrees. Butter the bread on one side and place butter side down on a non stick backing sheet. Layer one type of the sliced cheese on each side of the bread, next add some thin slices of the brie on one side on top of the sliced cheese. Layer basil on one side on the slice as well and the layer sun dried tomatoes on the other slice. Bake the slices in the over for 10 minutes. After you remove them from the oven, close up the slices to form a sandwich. Next, preheat a pan on the stove top, add a 1 tsp butter to melt and toast the sandwich on each side for 1-2 minutes on each side until brown.

oritteroposays...So how's it Mediterranean?
lurgeesays...Good question. Maybe if she used feta cheese instead of brie, colby jack and havarti.
