Pretty interesting! I'd be curious to find out how milk with added detergent, versus milk without detergent, looks after a few hours sitting around... if the fat rapidly separates away from the skim/water, well, that then its probably the difference in 'polar' water (positive and negative charges) and the 'nonpolar' fat (no charge) that is sort-of being exacerbated by adding highly polar detergent.
