Weird.

I think they just wanted a play on "pay it forward," and that was the closest they could get that also implied the element of hidden camera surprise.

Every time there's a hidden camera thing focused around a server who's supposed to be such a wonderful, kind person, I always secretly hope they'll be caught on tape being a total asshole.

That word makes everyone think of giant penises. Well, at least me. But so does "sausage".
