The Plant that ate the South

Kudzu is an invasive plant species that was brought to the US from Asia in the late 19th century. The climate in the south turns out to be a good environment for the plant to flourish.

Kudzu root is totally edible!!! Research indicates that if the kudzu root is eaten, the plant will die.
