All I can say, having lived there for a couple of decades, is that it is a good thing weed doesn't grow well there. Damn fine people who like a little drink now and again.

Kids should know most of these vegetables before they hit school... but if not before school, I would certainly expect them to learn about them in school. Sure, things like radishes and eggplant I could understand, but potatoes and tomatoes? Terrible. I don't find this hard to believe; the show takes place in one of the unhealthiest cities in America, after all.

I can think of about 2 recipes which actually call for fresh whole eggplant, and neither one of them would be popular in England (unless at a foreign-food restaurant, where even if parents brought kids there, they wouldn't see how the food was prepared).

I bet first graders who live on farms and eat only orgranic food still wouldn't be able to identify half the veggies on that table. (they would get the stuff he held up and asked about though)

I believe she said you could just use a little more salt if you didn't have fish sauce. My mom makes this w/o the fish sauce, but with hot pepper flakes (nice and spicy) and korean pickled radish juice and it is delicious!

Instead of rinsing with all that water, I usually use a bowl of iced water (LOTS of ice) which I dump the noodles into after draining them. I swirl the noodles in this super-cold water until they are very very cold and then drain and squeeze them out. This seems to work fine. also, the more hot sauce, the better! I like to put a lot of very spicy radish kimchee on my naengmyun. I actually have a much simpler recipe that tastes great and is spiced up in a way that you don't have to add any hot pepper sauce. I learned from my mama, so I can't divulge her secrets!
