Bullitt - look at the chase scene camerawork, before & after, this film. it's a little like watching buddy action movies, before & after Lethal Weapon.
French Connection - you have no idea, what it took, for that scene to be filmed. unless you DO know what it took, which is like 5 ppl here including me, in which case you know what i'm sayin'.
To Live And Die In L.A. - Friedkin does it again.

The first thing I thought of was Ronin. Followed by the Blues Brothers and The Fifth Element (ok, technically not a car, but still a great chase scene)

The Blues Brothers--Police Car Chase Finale
I was going to go with a whole "classic car chases" theme (for example: The French Connection, Bullitt, The Italian Job (1969), but the Blues Brothers is the one I enjoyed most, and I decided just to stick with this one.
As far as newer movies go, The Transporter, Ronin, and The Rock had pretty good ones. I'm sure other 'sifters have their favorites...
