How To: Chicken Lo Mein
How To: Stir Fry: Chicken Lo Mein
Ingredients:
- Sesame Oil (wok oil, or corn oil will suffice)
- Stir Fry Sauce - Classic - This is like a BBQ
- Chicken Strips, Boneless Breast, any chicken that is boneless
- Lo Mein Noodles - commonly called egg noodles or Fettucini
- Frozen Vegetable Pack - Asian preferably
- Wok - Non Stick is the best.
- Spatula, or spoon (wooden to avoid melting)
- Bowls for ingredients.
- Serving Dishes
- Place the Noodles into a pot, and boil.
- Place the Veggies into a bowl.
- Slice the Chicken, into strips, or cube cut the chicken. However you like, just cut the chicken up. This lowers the cooking time.
- Heat the wok, on hi temperature on the oven range.
- Pour a bit of sesame seed oil in the center of the wok.
- Wait for the sizzle, or expansion of the oil away from the center of the pot. Then drop the chicken in. Watch out for the popping oil.
- Periodically flip the chicken. I prefer to flip with the wok only, but this is where the spoon or spatula is good.
- Periodically toss some of that stir fry sauce on the chicken.
- The chicken is not done until it is a dark brown, but please cook longer if you feel it is not done.
- Place the chicken on a plat, separate from the other ingredients.
- The noodles should be well boiled by now! Turn them down, and let them simmer.
- Toss the veggies in to the wok.
- Toss some stir fry sauce on them, I am liberal with the sauce.
- Flip the veggies.
- The veggies should be browned and crisp.
- Place the cooked veggies into a bowl, separate from the other ingredients.
- Strain the noodles free of water.
- Dump the noodles into the wok, a manageable amount only.
- Stir the noodle, and be liberal with the stir fry sauce.
- It does not take long for the noodles to turn brow, so be careful not to burn them.
- Place some noodles on a dish (Plate).
- Add Veggies to the top of the noodles.
- Add Some Chicken to the top of the dish.
- DIG IN!

Stir Fry is my favorite dish to make.
I usually use:
1 lb Quartered baby carrots
A few handfuls of Snow peas (don't slice these)
1 can sliced Water chestnuts
1 each Orange, Red and Yellow bell peppers
8 oz. White mushrooms, sliced
A pound or so of Broccoli crowns
And I use Steak. I use fresh veggies, I just think they're better.
Start cooking your rice if you want long grain, or if you use instant you can wait.
Cut the veggies all up and put them in to their own bowls.
Cook the steak (sliced into whatever you want) in the wok with the stir-fry sauce. Once the steak is cooked, remove from the heat so it doesn't get over-cooked. Just make sure not to cook it too much because you'll be putting it back on the heat in a few minutes.
Pour in some sauce and the broccoli and carrots first. Once those cook for a few minutes, add the rest of the veggies in whatever proportions you want. I usually have too much stuff to fit in the wok, so that's why I keep them in separate bowls. Once they're sufficiently cooked, add the steak back in to heat it up.
Remember to periodically add the sauce as it's all cooking. Once it's all cooked, serve over a bed of rice.
For best results, eat with wooden chopsticks.
