Cooking with Hydrocolloids - How to make a false egg

For several years now, I've been a huge fan of Ideas In Food, where Chefs Aki Kamozawa & H. Alexander Talbot create some of the most interesting and exciting dishes to be found anywhere on the internet. (not to mention the amazing photography)
Recently, they've started making videos showing off their chops. This one has Alex showing off a procedure for using Methocel to create a false poached egg- Cauliflower for white and Hollandaise for yolk. Very inventive!
