it was very satisfying.

This recipe is pretty close to how I'd make it, except I'd put in some (1 tablespoon) chopped fresh rosemary, and might use chopped leftover roast lamb instead of mince:

Back at you but definitely the wrong day. I've already gone thru turkey dinner, after thanksgiving turkey sandwiches, a couple of hot turkey sandwich dinners, a turkey pot pie and I made the carcass into soup and that's all gone. Happy Australia Day everybody. I'm going to celebrate by having some vegemite on toast this morning, and maybe a a meat pie for lunch, and then a a few VBs.
If you would like to get the meat pie experience in the US, get a Swanson's Chicken Pot Pie, but not the Hungry Man kind - because they don't have the bottom crusts - cheap bastards.
After it's cooked, and your're ready to eat, cut off the top crust and put some mushy split peas under it. Close it - and then put a layer of ketchup on top of the crust.
Actually, that will be nothing like an Aussie meat pie. But it's as close as you'll get. (nyah, nyah)
