Yes, you're right. But in the English translated menus, they would often write Japanese ravioli or Japanese dumpling next to gyozas.. I figured 'dumpling' was a silly name. Ravioli is so much better!

I've lived in HK for the past year and hear Cantonese constantly everyday. I've heard more than 15 different languages over many years and I can honestly say the only language that doesn't actually sound like it's real communication is Cantonese (due to the endlessly repeated similar sounds).
The speed at which it's spoken just compounds the difficulty to comprehend how everyone is actually understanding each other.

The closest I've been able to come to learning it so far is short specific/objective phrases, which I learn correct verbal usage by deliberately spelling the words wrong (phonically), using numbers and symbols in the middle of sentences so as to ensure I get the pronunciation right.

I will be asking a lot of people tomorrow to tell me how to say "9 old dogs bothering enough to get dumpling".. but I already suspect that what he's saying is legit.

Hehe I wouldn't be surprised if it's true. I heard horror stories about some nasty malpractice. Stuffs like putting washing powder into batter so they look more puffy when fried. Or use petroleum asphalt to burn away hair off meat.

For a period of time, no one dare to eat lamb skewers in Beijing because it's rumored that rotten or rat meat were being served.

I think what she meant was that it gives people "heat". In Chinese food, every thing you eat has a purpose to balance the body. By example, eating red meat will give you "heat", whereas eating winter melon or water melon will give you "chill".

Dog meat is considered one of the "hottest" red meat available ("hotter" than lamb). Eating "hot" things are generally considered unhealthy during spring or summer periods unless you are located in a very humid area or if you balance them with "chill" food. However I heard some people eat them as some sort of aphrodisiac to increase their sexual potency.

So with you on the sauce. When I was with my Korean girlfriend, I found mondu to be quite different flavor-wise. I think mondu tends to have different stuff in it, like cellophane noodles and some sort of herb or vegetation that made it different. Not my favorite, but still good. I'm pretty much obsessed with stuffed dumplings in all of it's forms from the pasties of northern Michigan, to Empenadas, to my beloved potstickers and gyoza.

Crap... Now I'm starving for some good dim sum.
