Searing meat to hold in flavor is wrong? wtf

newtboy says...

The juiciest steak will result from slow, just warm, moist smoking. You will get a 'crust', but the interior will retain almost all the juices. I smoke brisket for >24 hours with a wet pan between the smoke and the meat. It falls apart at the end and is more than juicy.

Regardless of how this movie pans out, he's doing Mute next... I'm still not clear if it is takes place in the Moon universe or not. I know Sam Rockwell will have a cameo in Mute...

Oil Change Scam - Canada

RFlagg says...

Having worked at Walmart doing oil changes, and another tire/lube place, I wouldn't say it's super easy to do on your own, especially with newer cars. Most newer cars have a a large skid plate that is a pain in the ass to remove. Ford makes their especially difficult as the skid plate is full, so if you are working in a pit, it's very hard to get to all the screws (usually Torx bits)... Many others are using skid plates under the car too, though many have access panels to the drain plug area and the oil filter area (oddly enough one of them, I think it was Mazda, had an access panel for the oil filter, but it was flipped as if installed backwards, but then the drain plug panel wouldn't be correct, so very odd design for awhile)... Sadly most of them seem to be moving to full skid plates as well. My favorites were the GM Ecotech type, where it has a canister filter near the top, drain the oil, open the canister (tool is cheap enough too), close the drain, replace the filter, tighten everything up and add 5 qts (though one of them took a slightly different amount).

That said, if you don't mind crawling under the car on a ramp, it isn't overly difficult. It is a very simple process.

I've learned from working those places. Ford's full skid plates suck, and sadly they seem to be joined by others. (Skid plate is apparently required for proper cooling, and I'd guess it also helps improve gas millage). Chrysler tends to strip, both the pan and the nut... Chrysler also has a long standing problem with lug and lug nuts.... GMs are okay for that sort of stuff (oil, tires, etc)... I didn't like doing tires on European cars as they use that odd lug stud instead of a lug/nut combo, which makes for a pain in the ass to remove and put the wheel back on the car (I can't imagine having to do that in the rain or snow on the side of the road, lug/nut combos makes so much more sense). Toyota can be a pain in the ass as they are moving to a thing that requires a very special custom cup to remove the filter housing...

EDIT to add: I also didn't know anything when I first started at Walmart... the advantage there over the other place was no upselling other services. Now if a car required Synthetic (newer GMs a few Toyotas mostly) then we would have to sell that oil change rather than the cheaper one for liability reasons, but we didn't check all the other stuff and didn't care... now if we say something dangerous we'd let the owner know, but otherwise... Now the other place we did check the other fluids and the managers would try to upsell services.

One More Way China's Beating America....Traffic

iaui says...

This whole thing is crazy.

Also, it looks pretty real but whaaat is this?

You can see it at 1:52 in the video. It's a still image that the video is panning over and it looks like either a car has driven over another car or there's a seam from photo editing. I think the latter is more likely. Can anybody else explain it any other way?

(It could be a little bit of road rage got the better of a pair of drivers. I bet there's more than a bit of that going on throughout the video...)

Big A$$ Brown Bear Up Close And Personal

Esoog says...

Big bear balls of steel! I have a feeling that's fairly normal for their area? When the camera panned up it looked like a several houses were in close proximity. I would have called animal control to have it removed to it didn't hurt anyone nearby, but this guy just shoo'ed it off like it happens all the time.

Building a $1500 Sandwich from scratch

newtboy says...

To me the chicken looked really bland...he just pan fried it with nothing. I would have slightly salted it, then put rosemary and butter in the pan and slow fried it in that, much more flavor (EDIT:funny enough, that's exactly what I'm having for dinner, but I baked it with tatos and carrots). Between the bland chicken and complete lack of condiments, I could totally understand why he didn't rate it high.
Great concept IMO, but poorly executed. Just a few more easy steps could make all the difference. He probably should have started with a good sandwich, deconstructed it, and then re-recreated it from scratch with help from knowledgeable people (or at least books) telling him how to do each step properly.

Also....BACON!

To be fair, it may be an ancient art form, but it doesn't necessarily translate into this type of show. I am sure peruvian pan flutes or meditation bowls would also get less than admirable results.

That said, some of the stuff in his youtube video sounds more unique and might have been a better fit for his intro song.

Exercise is NOT the Key to Weight Loss

newtboy says...

That's insane. That sounds like a pretty blatantly self serving (and ridiculous) statement for a vegetarian cook to say.
Good meat takes way more proper prep work, you don't just slap it on the grill. I usually marinate meat for hours-days before grilling it, or coat it with dry rub and let it sit for an hour+.
Just read my above post for a totally simple and easy recipe for green beans that works for just about any vegetable you might cook.
Another good one is just pan fry in butter, olive oil, or sesame oil then splash in some soy sauce at the end. Soy/ginger salad dressing can be substituted for soy sauce for more flavor.
For a third simple recipe, lightly pan fry in butter, then add brown sugar and peppers (white, black, cayenne) to candy them. YUM.

As one of my favourite chefs says on her NY vegetarian restaurant webpage:

Anyone can cook a hamburger, leave the vegetables to the professionals.

It's just easier to make meat taste good, but vegetables can be amazing. The rub is that it's just not as easy as throwing meat onto the BBQ.

Get a few hanging pots and grow some blue lake stringless pole beans and sugar snap or snow peas. Also a small rosemary plant. Pan fry those beans and/or peas in butter and rosemary until slightly browned. Yum, and easy.

You Suck at Cooking - Roasted Brussels Sprouts

newtboy jokingly says...

Terrible recipe. He sucks at cooking.
Far better is cut them in 1/2 and pan fry them in olive oil, butter, and fresh rosemary. Instead of 30 min of cooking, they're ready in under 5 and are great.

Is Climate Change Just A Lot Of Hot Air?

bcglorf says...

Or maybe we tackle this from 180 degrees.

As opposed to what is happening, or how likely, we may find common ground on what it is we should actually be doing.

I've already made the suggestion of electric vehicles and fission, fusion or renewables in place of coal as the road away from emissions. Specifically improving li-ion batteries as Tesla is doing is a major step. Researching sodium-oxygen batteries would be even better as they can hold 4-5 times the power and have cheaper materials and recent results have us close to making them viable, so I'd like to see gov money directed there.

For power solar and wind are currently only cost-competitive because the scale is small enough that we get away with treating coal plants like giant batteries covering our baseline. They simply aren't cost effective to scale up for base load yet, and not likely to be for another 10-20 years. We can have a lot of nuclear plants built in that time. With electric cars coming into the picture, we're also going to need that extra electric capacity. I again would strongly encourage more gov money going into French style large scale nuclear power deployment. China's already doing it, even they've had enough of their current coal literally blocking the sun in the sky on them and nuclear is part of their clean air push. We should be encouraging that and following suit out this way.

I also wasn't kidding about Lockheed-Martin's fusion research. A lot of new ideas are out there for fusion confinement plans and Lockheed has publicly declared their intentions to have a demonstration reactor in 5 years time. I'm hopeful, and if that pans out, the roll out of truly cheap and clean power will start in the next decade for the sole reason that fusion under cuts coal for price.

Part of me reason for these measures versus more drastic ones is we need to keep our economies growing because regardless of what we do the next 30 years, the oceans will continue rising that entire time and the mitigation measures we're going to gradually be spending more and more on are gonna required us to have the money to do them.

If anybody's got better suggestions I'm all ears.

Bruce Jenner "Call Me Caitlyn" On Vanity Fair’s Cover

JustSaying says...

First, it's 'your head' and not 'you head'. I believe using proper english is considered a norm in society. We don't speak 'gangster' here.
Second, both Groups, slaves and jews, were marginalized parts of society who got treated badly because it was normal for the majority to do so. Then we grew up and started to understand that you shouldn't act this way. So far, only some of us managed that.
Third, I'm on a different continent than you are, it doesn't matter where I go. Also, Peter Pan is my Idol, I'll never grow up. I thought a man who is into clowns would understand.
