Finally my experience is put to value:
The straws fill up the bottle with air as you drink the fluid. Otherwise you would have to pause to let air rush into the bottle by taking your lips of it.
If there would be no air to take the place of the fluid you drink you would suck your face into the bottle due to the vacuum you create and live in the bottle for the rest of your days.


Turn a bottle upside down. The liquid glugs out of it, with the liquid fighting to get out past the air that's coming in. Now try the same thing with a straw. There's no glugging and the liquid comes out much faster and easier.
So, yes you can drink from a bottle without the straw, but you can't drink as fast without the straw. If you're really good you can suck the liquid out of the bottle so you can drink a bottle like that in just a few seconds.
