ingredients
2 tablespoons olive oil
1 sliced onion
1 carrot peeled and sliced
2 cloves of minced garlic
1 tablespoon of curry powder
4 cups chicken broth
1 can (14 oz) diced tomatoes
2 cups cooked and chopped chicken breast (or grated)
1/2 cup of coconut milk
Juice of 1 lime
1 bunch of chopped fresh coriander
Coconut flakes for garnish
sea salt to taste
ground fresh black pepper to taste
Instructions
Heat the oil in a large saucepan over medium-high heat. Add the onion, carrot and garlic and cook until softened.
Add the curry powder and cook for a minute.
Add broth and tomatoes and bring to a boil. Reduce to simmer and add chicken, coconut milk, lime juice and coriander. Simmer on low heat for 5 minutes.
Serve hot soup, sprinkled with coconut flakes if desired.
