When I do that, at least half the mud ends up on the ground or my boots, two-fifths ends up smeared all over the side of the blocks, and the remaining fifth where it's supposed to be. This is not counting whatever amount I accidentally fling across the room when I'm trying to pick it up with my trowel.

This is why you hire professionals.

There's the most important thing there that you probably don't think of when trying to do it yourself.

The string.

If someone isn't using string, paint or an equivalent way to keep their work going the way it needs to for spacing and what not, you're going to end up with issues.

I feel a little ashamed that I (in all likelihood) make more money than this guy. Nothing I do requires this much patience, attention to detail, or skill.

He is setting the height by doing the tapping, along with getting the mortar to grip the block, rather than just have it set on it. Typical mortar fill between blocks is about 3/8". What I imagine is the first block he set and measured for height and level, then taps the rest down to meet those specs of the first.
